PINOT NOIR 100%
The winemaking process is traditional: the grapes are de-stemmed, crushed, cold-macerated for a few days then trodden down on a daily basis. The process of fermentation is carried out naturally at low temperatures. After a period of 2 weeks in vats, the wines are brought to the cellar and aged 12 months. Harvested by hand, ageing in oak barrels, 15% new. No finning, unfiltered wine. 100% destemmed.
Aux Clous lies on the lower slopes between the village and les Serpentieres. Well exposed to the south, two main plots here, one vine of 60 years old and another one is 30. The 2015 Aux Clous, which is owned entirely by the estates has a floral bouquet, delicate and detailed, with dark red fruit. Fine texture, the flavour comes through the texture beautifully. It has a charming more fruit driven bouquet with a cheeky prickle on the finish. This is also almost delicate with good vibrancy and detail to the delicious, refreshing and intense medium-bodied flavours that possess fine balance on the lingering finish
