
PINOT NOIR 100%
VINIFICATION
The winemaking process is traditional: the grapes are de-stemmed, crushed, cold-macerated for a few days then trodden down on a daily basis. The process of fermentation is carried out naturally at low temperatures. After a period of 2 weeks in vats, the wines are brought to the cellar and aged 12 months. Harvested by hand, ageing in oak barrels, 15% new. Unfiltered, no finning. 100% destemmed.
TASTING NOTES
This Bourgogne Pinot noir comes from 3 parcels at the extremity of Savigny, both on the hill and in the plain area «Les Boutieres». It has a nice bright ruby colour. Dark red fruit with a silky impression. Really impressive texture and concentration for the label. The mid-palate is a little more pinched, but then opens beautifully. Some discreety dry tannin in the finish, but with no grain, only a sensation. The bouquet offers light red cherry and bergamot scents that feel a little muted through the palate is light and approachable with simple red cherry and strawberry notes. There is an earthy tincture toward the fleshy soft finish.
