“Double Pass” Distillation

Recipe Unchanged Since 1989

Aging draws its inspiration from methods used by Alsatian ancestors who would put their eau-de-vie in earthenware jars and stock them in the attic. This way the jars would be influenced by changes in weather and temperature variations.

The naturally occurring phenomenon of oxidation improves the aging and allows the beer eau-de-vie to slowly ripen. Once the aging process is finished, the master liqueurist transforms the eau-de-vie into a spirit using a recipe unchanged since 1989. After adding an infusion of spices, citrus and sugar according to a precise technique, the Fleur de Bière is refrigerated and filtered.

TASTING NOTES

Beyond the scent of hops, the nose is also well-served with the remarkable perfumes of tropical fruit, citrus and gingerbread. Fleur de Bière is generally served ice-cold in order to best experience its exhilarating original character, but can also be used in cocktails or over sorbets.

About the Producer

Over a century ago, in 1902, winegrowers in the village of Eguisheim decided to join forces to create one of the first cooperatives in Alsace, now they’re the ambassador of the Alsace terroir, producing the best wine, crémants and eaux-de-vie from the region to the world. The very original Wolfberger Eaux-de-Vie is done using one fruit in one of two different distilling methods. After fermentation or maceration, the brandy goes through distillation using copper stills. The first is the traditional “double pass” method, producing round flavours that are long on the palate. The second is the one-pass method on a column still, which gives sharper, lighter aromas. After aging, the Eaux-de-Vie from both methods is blended in order to get the best expression of the flower and the fruit. The majority of the fruit comes from their orchardists in Alsace terroir.

The Wolfberger Distillery continues Alsace’s long distilling tradition. True to its reputation, the winery has also put its know-how to work on innovation, creating white alcohols that mix originality and refinement, such as our two exclusive stars, Wolfberger la Fleur de Bière and Kéva, with beer and lemon aromas.
