Harvested at optimum maturity, partially destemmed and placed in vats, vatting for 21 days in stainless steel vats, 2 pumping overs and daily punching of the cap before pressing and put in barrels by gravity.
Malolactic fermentation in barrels and aging for 14 months.
This red wine is fleshy, with an engaging nose full of spices and black fruits. On the palate it is an explosion of black fruit flavours, notably blackberry and black pepper. The finish is spicy and slightly cocoa-like. This is a great red Saint-Joseph that has a very good ageing potential. To be discovered by those who like powerful and well-balanced Saint-Josephs.
Located in the northern part of the Rhône Valley, in the historic heart of the Saint Joseph appellation, the estate's first harvest took place in 2014. After several years experience in France and abroad, Bastien Jolivet decided to return to the family business and and to join forces with his father. They stopped selling the grapes to make their own their own wine. The vineyard is planted on a hillside with south/south-east exposure and numerous stone stone walls. These granitic soils are the ideal places for the Syrah to express itself to the full. The work in the vineyard is almost entirely done by hand.
